NVPG lambs are rasied and finished on grass. They are taken to market between 6- and 8-months of age. Depending on the breed, the lambs will finish between 45-65 lbs hanging weight. The smaller Katahdins will finish at around 45-55 lbs hanging weight, while their larger cousins the Hampshires and Dorsets will finish at around 55-65 lbs hanging weight.
Depending on your custom butchering specifications, final take-home weight will vary between 50% - 60% of hanging weight. Nonetheless, a whole Lamb requires very little freezer space, about what an average family would bring back in meat from a weekly shopping trip.
